Hot wings are my favorite food. I won’t try to fake that or classy it up. I’m a midwestern girl who loves a good hot wing. I also happen to be a personal trainer and nutritionist so I try to make majority of my food healthy-ish. I am firm believer in enjoying what you eat so my go to is usually trying to create a healthier version of my favorites:
Meet my Hot Chicken Thighs.
I love to use thighs for a number of reasons.
1.) I have a less likely chance of overcooking them. You give me a chicken breast, more than likely I will beat that thing into submission in the oven. Cue Chevy Chase Christmas Vacation cutting into the turkey moment. Eek! Sad, but true.
2.) They have more flavor and more fat! I love good fats and personally, I don’t like a lot of good fat foods….avocados aren’t my jam. Please don’t take my girl card away, I know it’s weird. So I have to get my fats elsewhere!
3.) Friendly on the wallet!
Alright so let’s get into it and get to making these yummy things! Here’s the recipe.
Courtney’s Hot Chicken Thighs
6-8 chicken thighs (I like boneless and skinless and I get mine at Sprouts)
2 tablespoons coconut oil
1 c. Oat Flour*
1 cup Franks Hot Wing Sauce (or hot wing sauce of choice)
1 egg
Preheat oven to 375.
Make oat flour* by taking gluten free oats and blending until ground. I put mine in my Ninja bullet. Put 1 c. aside in a bowl.
Heat coconut oil in skillet. While that is heating up beat egg and place in a separate bowl.
Dredge the chicken thighs in the egg mixture, then set in oat flour and coat. Then add to skillet with oil. Fry on both sides until crispy.
Place chicken on foil lined cookie sheet and coat with 1/2 c. hot sauce. Bake for 20-30 minutes until done. Remove and add remaining sauce.
Let stand 5 minutes before serving.
I enjoy mine with the Broccoli Crunch Salad from Sprouts. It’s my newest obsession!
